Advise to not desinstall rudder server if possible

Description
Desintalling rudder server may lead to the deletion of precious historical information of configuration knowledge. It is generally enought to just stop and backup the vm on which rudder server is installed. Make that solution explicit in documentation.

This bug has been fixed in Rudder 5.0.20, 6.0.10, 6.1.6, 6.2.0~beta1 which were released by the end of October 2020.
